When I think about California, I think about two of my favored hobbies: browsing and sourdough. Eight years ago, stimulated by the San Franciscan sourdough revolution and the Tartine bakery especially, I commenced my personal sourdough called Cleo. This grew into a food-waste campaign called Cleo The Friendship Bread: an easy, zero-waste recipe for people to bypass with a bit of sourdough starter.
When making sourdough, the usual technique is to overfeed the starter, which ends up in an extra that desires by hook or by crook to be disposed of. However, while used regularly – at the least as soon as every two weeks – you could feed your starter just the quantity you want to make bread and save a tablespoon of the mix within the refrigerator to build your starter again every time. Sourdough pancakes
Pancakes are a delicious and thrifty way to dissipate excess starter after feeding if you don’t have time to make bread.
